Fougasse Bread
Makes 1 fougasse loaf
Fougasse is a bread that is traditionally made in the south of France but is popular in other areas, often served with wine as an aperitif before dinner. Fougasse can be made as a plain bread or flavored in different savors. This is my favorite, Fougasse aux Olives.
2 cups (9oz, or 250g) white bread flour
1 packet instant yeast
1 teaspoon fine salt
2 tablespoons of olive oil, plus more for drizzling
3/4 cup (6oz, or 170ml) warm water
1 handful pitted black olives, preferably from southern France, halved or roughly chopped
1/2 teaspoon chopped fresh rosemary leaves, optional
Sea salt
